About the Recipe

Ingredients
1 tbs of ground flaxseed + 3 tbs of water (flax egg)
1 cup oat flour (blend 1 cup of oats in blender or food processor)
1 cup whole oats
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tbs of cinnamon
1/2 tsp of sea salt
1/2 cup of pre cooked quinoa (cook 1/4 dry to equal 1/2 cooked)
1/4 nuts or seeds of choice (optional)
1/2 cup of nut butter of choice
1/4 cup of maple syrup
1 medium smashed banana or 1/2 cup
1 tsp of vanilla extract
2 tbps of coconut oil or butter (not vegan ;)
Preparation
cook the quinoa a day before or give yourself lots of time for it to cool down before using.
pre heat the oven to 350 degrees and line a baking sheet with parchment paper or inserts.
prepare the flax egg by combing the ground flax and water and let sit for 5 minutes
blend 1 cup of whole oats in your blender or food processor if you have oat flour - amazing!
combine all the dry ingredients together - fold in the quinoa (reminder only 1/2 cup cooked this makes a difference too much will dry it out!) and nuts or seeds.
combine your wet ingredients until smooth.
pour the wet ingredients with the dry and mix until combined.
i use 1/4 cup measuring cup or 1 large spoon to dish out the cookies on my baking sheet.
bake for 20-22 minutes or until lightly brown & let cool before serving - this helps them get extra chewy and delish.
i usually double my batch and pop some extra for the freezer!
